After Howrse said Diamond would be the "final divine", they introduced Onyx and a bunch more gemstone divines...so I really can't be certain that Howrse really means "final divine" now.- I love the cows, but I can never turn them into leather

Yes, as stated in the The EC Time Line - Cows are being brought to the game in the form of a "crop" of sorts that one can raise to produce Leather to make Saddles.
I love the cows, but I can never turn them into leather
I wouldn't think too much into this right now to be honest - chances are high that, like any other crop - they will just be something static that we "plant" and forget about, then "harvest" at a later date.
I personally are hoping they work like an Apple Orchard - a crop that lasts until you stop growing them that can be harvested once a month [So every month, you would get some odd amount of leather from your cows]
But all we can do is wait and see
