Unfortunately this forum isn't for opinions, but rather questions on how to play the game.
Preferably I like to put coats on my own horses, but depending on the need, I will put the coat on other horses I buy.
If you want to keep the horse, or sell it, that too is something to consider.
If you are referring to one of the coats from the Seven Seas wandering spirit item, then they just provide a 11+ bonus in each skill.
